Paleo 4-Ingredient Strawberry Ice Cream

Well, that weekend went by fast! Happy Monday out there!


Today's post is all about ice cream. :-) Paleo ice cream, that is. When following a Paleo diet, dairy is a no-no, so this isn't actually an ice cream recipe that requires milk. The alternative is coconut milk. It makes a very delicious ice cream that is VERY similar to real ice cream. This recipe is Paleo, gluten-free, sugar-free, and dairy-free, but loaded with creaminess and taste. Made with only four ingredients, it's easy too!

I found an excellent Paleo ice cream base recipe from O'Mamas, or as they call it, Sweetened Condensed Coconut Milk, and then played with adding in strawberries until I got the perfect strawberry ice cream look-alike.

You'll need an ice cream maker to make it. I use the Cuisinart Ice Cream Maker and it works great, but any automatic ice cream/frozen yogurt maker will do. Here's what to do:


In my house, this doesn't last long, maybe a couple of days. But if placed in an air-tight container, this should last a couple of weeks in the freezer. The add-ins you could add to this are limitless - nuts, chocolate, bananas, blueberries, etc. Sometimes I like to melt Enjoy Life! Chocolate Chips with a little bit of coconut oil to create a clean fudge-like topping and pour it over the top - DELICIOUS! This is definitely my favorite summer go-to clean dessert.
