Paleo Fourth of July

Happy Monday Blogland! :-)

With the Fourth of July quickly approaching, I thought I'd do a roundup of some recipes that I've recently found on Pinterest that can make your holiday parties fun, without all those extra calories.



It's hard enough sticking to a healthy diet as it is, without the added holiday-themed foods tempting you. But this Fourth of July, opt for one of these desserts or snacks instead of gluten-packed, sugar-loaded, high-calorie foods.

Lemon Fruit Tart by Paleomg This is a healthy twist on a lemon tart/cheesecake. It still includes honey in the recipe, so it will curb that sweet-tooth, but without any refined sugar. And it just looks so yummy and festive.



Coconut Pudding by Frock Files A vegan and gluten-free take on Hawaiian haupia (pudding or panna cotta), this recipe is perfect for hot, summer days. It's cool, creamy, festive and even though it has a little added sugar, it's still on the healthier side.



Red Velvet Cupcakes by Heather Christo This is my favorite recipe of this roundup! I used to be a red velvet cake/cupcake addict before my Paleo days. This recipe is the ultimate substitution. It calls for brown rice/sorghum/tapioca flour, which is sure to provide that perfect cake texture, without all that GLUTEN. The icing calls for butter and coconut milk, which is so much better for you than classic cream cheese. It does have added powdered sugar though, which is NOT Paleo. So this recipe is Paleo-ish. If you make these for the Fourth, I bet there will be zero leftovers. (I also bet that if you don't tell anyone they're gluten-free, they'll never know.)



Blueberry, Strawberry, and Jicama Salsa by Winning Without Gluten This would be a perfect salsa to take with you to a Fourth of July party. I know strawberries and blueberries aren't exactly the typical idea of what salsa is, but it's the healthier version, and very festive. Be sure to grab a bag of gluten-free tortilla chips to go with it.



Berry Bliss Rocket Pops by Family Fresh Cooking It wouldn't be summer or the Fourth of July without a frozen treat, and these popsicles are nothing short of that. Made with fresh (or frozen) berries and either Greek yogurt or coconut milk, these simple treats are much healthier than sugar-packed traditional popsicles.



Summer Berry Trifle by The Urban Poser
This is an excellent clean recipe that's packed with flavor. And how cute would it be to serve them in mini Mason jars? It's sure to be a crowd-pleaser, and again, if you don't tell anyone it's gluten-free, they probably won't know. ;-)

11 Random Facts About Me:
  • I have a scarf addiction. I own about 75 (probably more like 100). I can't help myself. I justify it because I'm cold-natured and freeze to death all the time.
  • In college, I participated in two 2-week study abroad programs. I went to the United Kingdom and Australia. I got more out of those two trips than all of my classes in college.
  • I have a fear of open water - like large lakes or the ocean. It really freaks me out - I'm scared of getting stuck out there, and the creatures that lurk in the water. Because of this, I have a slight fear of boats, on open water, too. I blame watching the movie "Jaws" at a young age for this.
  • I have double-jointed fingers.
  • I can't stand to chew gum. Weird, I know. The chomping gives me a headache and I very seldom will ever do it.
  • I've had 19 moles cut off of my body in the past 4 years, including 4 from the bottom of my feet (OUCH). 17 of them were pre-cancerous (the other two were benign). DO NOT LAY IN A TANNING BED.
  • I have PCOS and hypothyroidism.
  • I got a bow last year and plan on bowhunting for the first time this fall (I've only ever used a rifle to hunt in the past).
  • I'm a messy cook. My kitchen is an absolute disaster when I'm done cooking/baking.
  • I totally get consumed by books sometimes. I love reading and if it's a suspenseful, well-written book, I'll spend every minute of my free time reading it until it's finished. I recently read Gillian Flynn's three novels in a week (Gone Girl is one of them), and the Girl With the Dragon Tattoo trilogy in a week and a half.
  • I have two older brothers who are 14 and 17 years older than me. Baby of the fam right here

  • How long have you been blogging and do you see yourself blogging for another year? I just started blogging in June! And yes, if everything continues to go well, I will continue to blog for many years to come.
  • Describe a typical day in your life. Not really a question but curiosity struck! Well, on a typical week day, I wake up at about 6:30, feed my fur-baby (she won't let me do anything else before feeding her), and get ready for work. I arrive at work at 8 and do work things until 5. Then I head back home to either run/workout/play with Lily, cook supper, and catch up on blogging/TV shows. I'm in bed by 10 or 11. Pretty uneventful. 
  • What's your favorite type of food and why? Dessert. Chocolate or peanut butter flavors. I have a major sweet-tooth.
  • Can you whistle? I can't, that's why I ask - ha! I can't whistle either! 
  • Do you like to read? If so, what's your favorite genre? I'm a total bookworm. I love adventure/suspense/romance/biographies. But honestly, I'll read anything.
  • I absolutely love your blog and friendship! This was a freebie :) I'm so glad we connected! I love your blog and friendship too!!
  • If you could travel anywhere in the world, expenses all paid for, where would you go? Italy. I'm dying to go!
  • Who was your first celebrity crush? Tom Cruise. Yeah, he's crazy now, but in the '80s, he had it going on! Top Gun, Cocktail and Risky Business are some of my favs. Why my mother let me watch these movies at a young age, I'll never know.
  • If we were having coffee, what would be your drink of choice? (It doesn't have to be coffee) Strong black coffee with some almond milk.
  • If you could switch shoes with anybody in the world for a day, who would it be and why? Honestly, a man. Any man. Just to see what it's like to think like a man does - and why they're so darn different than us ladies.
  • How much do you love me? Just kidding!! That was a vain question. What's your favorite accessory? Oh, but I do love you, girl! Haha! :-) My fav accessory is a scarf.


  • Morgan's questions:



  • Favorite candy? It used to be Reese's peanut butter cups. Now I've switched to Justin's organic peanut butter cups.
  • What is your dream place to travel? Italy. I will make it there one day.
  • What is your dream job/goal? My dream job would be to be my own boss, or at least be able to make my own hours. Job specifics don't really matter. Lol.
  • Dog/Cat or Other? Dog, but I love cats too.
  • Favorite form of exercise? Right now I'm loving HIIT workouts involving strength training too.
  • One item in your closet you can't live without OR that means the most to you? I love everything in my closet. I can't just pick one. ;-) 
  • Favorite TV show or channel? Food Network
  • How did you come up with the name of your blog? My parents grow everything imaginable in their large backyard garden, of which I "grocery shop" at often. So I knew I wanted "homegrown" in the name. I just brainstormed until I came up with "State of Mind."
  • Favorite book? I've read soooo many. I finally read the Poisonwood Bible. It's my fav so far this year.
  • Tattoos or nah? I have two. I want more, but I'm indecisive on what to get next.
  • Alcoholic beverage of choice? Wine. Moscato is my favorite, or any sweet wine. Wine slushies too, and sangria.


  • Cat's questions:



  • Why did you start your blog? I've been a fan of blogs for years, and I've relied on them for help with my own life, everything from recipes, fitness advice, fashion, health-related, relationship help, etc. I wanted to help others, like so many bloggers have helped me.
  • What is your holy grail beauty product? It's hard to pick just one. Anything NARS.
  • What is your favorite movie? This is a toughie. I'm a big '80s fan - Steel Magnolias, Can't Buy Me Love and Dirty Dancing are some of my favs.
  • What is something you can't be without? Sadly, my cellphone. I feel naked without it.
  • What is your favorite song? Again it's hard to pick just one. Probably Foo Fighters' Everlong and Etta James' At Last.
  • Do you have a pet peeve?  If so what is it? I'm not intending to offend anyone, but if you live in the U.S., please learn to speak ENGLISH. I have absolutely nothing against other languages, but I would never move to another country and not learn to speak the native language. 
  • Do you have a life verse or favorite quote?  What is it? From Edgar Allen Poe's poem A Dream Within A Dream: "All that we see or seem, is but a dream within a dream."
  • The beach or the mountains? BOTH! 
  • If you could be anything "when you grow up" or have any job what would it be? I honestly don't know - just to be my own boss. Maybe own a bakery or cute fashion boutique.
  • Since I am a Pinterest addict.... What is your favorite pin? Share it with me. This can be a recent favorite or an all time favorite. This pin. It was my first pin ever.
  • Who is your role model?  (This can be a a childhood role model or current.) Anyone in my family, really. I have the best family on earth.

    Ten on Tuesday - Apple Pie and Succulents

    It's Ten on Tuesday once again. Let the randomness begin.

    One. Yesterday was my brother's birthday, and he requested caramel apple pie. I made this recipe. It turned out beautifully. No, it's not gluten-free.


    Two. Over the weekend I also made some homemade granola, from this recipe. Delish!! And, it's gluten-free! I basically cooked all weekend.

    Three. I've been nominated for 3 Sunshine Awards! I'm so honored!! Tomorrow will be one giant Sunshine Award post.

    Four. This happened on Sunday.


    Five. I'm still following Fitnessista's Summer Shape Up workout plan. Have you checked it out? I love this week's workout!

    Six. I potted some succulents this weekend to go in my kitchen. I love how they turned out! I used string of pearls and ghosty succulents in the elephant, and put a big hen succulent in a Ball jar that I painted.


    Seven. Tonight I'm going to learn about fermenting veggies from my cousin, and learn how to make my own kombucha. I'm excited! I can't wait to ferment all of the things. There will be a post about this in the future. :-) Do you ferment veggies? Or drink kombucha?

    Eight. Need a good laugh? 23 Dogs Who Are Too Adorably Stupid For Their Own Good. These gifs will definitely make you laugh! Haha!


    Nine. I love all of the red-white-and-blue themed food I'm seeing all over Blogland and Pinterest. Did you see my Fourth of July Wine Slushies?

    Fourth of July Wine Slushies

    Last week while perusing Pinterest, I came across a pin about making wine slushies in an ice cream maker. Shut the front door! How did I not know this was possible?? I love wine slushies, as mentioned here.

    While the recipe I found sounded awesome, and easy, it has refined sugar added, which I try to avoid. So, I decided to try making this recipe more "clean." The result is unbelievably tasty - like, you would NEVER know there wasn't a bunch of sugar added. I present to you my Fourth of July Wine Slushie recipe - no added refined sugar, and topped with coconut whipped cream and blueberries. This is perfect for any upcoming Fourth of July celebrations!


    Of course, the main ingredient is WINE. I chose a red Moscato for this. I love any Moscato, but I didn't want to make this recipe too sweet, so I added red instead of regular. Any wine would work here.


    This recipe has 3 other ingredients, besides the wine - organic strawberries, local honey and organic lemon juice. That's it. If you desire toppings, you'll need blueberries, or any other fruit really (I'm thinking peaches would be delicious as well), and coconut whipped cream, or any regular/low-fat/sugar-free whipped cream. I made this coconut whipped cream from Oh She Glows. It's easy and the texture is exactly like regular whipped cream.


    I used a food processor to turn the strawberries, honey, and lemon juice into a puree. A blender/juicer would work fine too. Do NOT add all of the wine to your food processor, unless it's a large-capacity model. It should all fit in a blender, however. Once strawberries, honey and lemon juice are pureed, pour it in the ice cream maker, add all of the wine, and let it churn for 25 to 30 minutes. Done. Then top it with whipped cream and fruit and enjoy!


    Fourth of July Wine Slushies

    Ingredients:
    • 1 750 mL bottle of wine (I used red Moscato)
    • 16 ounces organic strawberries, hulled
    • 2 tablespoons local honey
    • 1 tablespoon organic lemon juice (I used juice from 1/2 lemon)
    • blueberries (for topping)
    • coconut whipped cream, excellent recipe here, or regular whipped cream (for topping)
    Directions:
    • Place strawberries, honey, and lemon juice in a food processor (or blender) and blend until pureed.
    • Add puree to ice cream maker, as well as whole bottle of wine.
    • Let ice cream maker churn for 25 to 30 minutes, or until desired slushiness is obtained.
    • Pour into glasses and top with coconut whipped cream (or regular whipped cream) and blueberries, or store in freezer until party time.


    Fair warning: This drink is delicious. You may consume more than you intend, so be prepared, and make plenty. :-)
